Ingredients

  • 4 bone-in or boneless pork loin or rib and loin chops 1- to 1-½ inch thick and 6 to 8 ounces each
  • cup almond flour
  • ¼ cup grated Parmesan cheese grated to a powdery consistency
  • 2 teaspoons Cajun or Creole seasoning homemade or store-bought (make sure it's gluten free)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • propellant free cooking spray or oil mister with vegetable, canola or avocado oil as needed

Instructions

  • Preheat the air fryer to 390 degrees F for 5 minutes.
  • Meanwhile, add the almond flour, cheese, Cajun seasoning, garlic powder and paprika to a shallow bowl. Use your fingers to knead and mix the mixture, breaking up any clumps, until well combined.
  • Blot the pork chops dry with paper towels and spritz both sides with oil. Set a pork chop into the breading mixture and and use your fingers to sprinkle the mixture over the chop, patting it lightly onto the surface. Coat both sides, shaking off the excess. Transfer to a large sheet of foil or cutting board and repeat with the remaining chops.
  • Spritz the air fryer basket with oil. Working in batches (my unit can cook 2 at a time), place chops in a single layer in the air-fryer basket, leaving space in between. Spritz the tops with cooking spray.
  • Set the air fryer for 6 minutes at 390 degrees F. After the initial cooking time, flip and spritz the tops of the chops with additional cooking spray. Continue to cook at 390 degrees F for an additional 4 to 9 minutes, or until an instant read thermometer reads 145 to no more than 160 degrees F. Begin checking the temperature after a total cooking time of 10 minutes and frequently after. Bone-in chops will cook faster than boneless and total time will vary from 10 to 15 minutes based on type and thickness.
  • Repeat with remaining chops.

Notes

Subsequent batches may cook a bit faster than the first batch.
To keep pork chops warm, preheat the oven to 200 degrees F. and line a baking sheet with foil. Transfer batches of chops to the baking sheet after cooking and transfer to the oven until ready to serve.
