Ingredients
1cupcottage cheesewhole or 2%
1tablespoonfresh lemon juice
2teaspoonsolive oil
1teaspoonDijon mustard
½teaspoongranulated sugar
¼teaspoonkosher saltor to taste
Freshly ground black pepperto taste
3cupscooked chickenchopped (I use rotisserie chicken)
⅓cupfinely diced celery
¼cupfinely diced red onion
1½ to 2tablespoonschopped fresh dill
Instructions
Add the cottage cheese to a blender or food processor and blend until completely smooth.
Transfer the blended cottage cheese to a medium bowl. Whisk in the lemon juice, olive oil, Dijon mustard, sugar, salt, and pepper until well combined.
Add the chicken, celery, red onion, and dill. Fold gently until evenly coated.
Taste and adjust seasoning as needed. Chill for 20 to 30 minutes before serving if time allows.
Notes
Store Cottage Cheese Chicken Salad in an airtight container in the refrigerator for up to 3 days. Just give it a stir before serving.
