Cottage Cheese Chicken Salad
A creamy, lightened-up dressing made with blended cottage cheese adds a boost of protein and great flavor to this Cottage Cheese Chicken Salad. Serve it with crackers or over greens for an easy lunch or light dinner.

Ingredients

cottage cheese
whole or 2%

tablespoon
fresh lemon juice

olive oil

Dijon mustard

granulated sugar

kosher salt

Freshly ground black pepper
to taste

cooked chicken
chopped (I use rotisserie chicken)

finely diced celery

finely diced red onion

tablespoons
chopped fresh dill
Instructions
Add the cottage cheese to a blender or food processor and blend until completely smooth.
Transfer the blended cottage cheese to a medium bowl. Whisk in the lemon juice, olive oil, Dijon mustard, sugar, salt, and pepper until well combined.
Add the chicken, celery, red onion, and dill. Fold gently until evenly coated.
Taste and adjust seasoning as needed. Chill for 20 to 30 minutes before serving if time allows.
Notes
Store Cottage Cheese Chicken Salad in an airtight container in the refrigerator for up to 3 days. Just give it a stir before serving.
