Air Fryer Breakfast Potatoes are a delicious accompaniment to Sunday brunch or any lazy weekend breakfast. Most breakfast potatoes that are served at greasy spoon restaurants and diners are greasy and deep-fried and sometimes referred to as Home Fries. This version has all the reminiscent spices and flavors without all the guilt! The air fryer gives these potatoes a crisp exterior with a delicious tender interior using a fraction of the oil that is required for traditional methods.

The great thing about this recipe is that you can whip up these Breakfast Potatoes anytime with simple ingredients you probably already have in your pantry!

Ingredients
- russet potatoes
- olive oil
- paprika, garlic powder, salt, pepper
- diced red bell pepper
- fresh parsley
These potatoes come together quite quickly and I love that you can prepare other breakfast items while they are cooking and then serve them hot!
Instructions
Step 1. Preheat the Air Fryer
Preheat your air fryer to 380 degrees F.

Step 2. Prepare the Potatoes
Wash the potatoes and cut them into bite-sized pieces. Pat them dry with a paper towel and transfer them to a large bowl. Add the spices and olive oil.

Add the diced red bell pepper and stir well to combine.

Step 3. Cook
Add the potatoes and cook for 20 minutes, tossing the potatoes about halfway through the cook time to ensure even browning.
Are Air Fryer Potatoes Healthy?
Cooking breakfast potatoes in the air fryer significantly cuts down on fat and calories compared with more traditional methods. Portion size is another thing to consider. A reasonable serving size would be about half a cup of potatoes which leaves lots of room on your plate for healthy fibers and proteins. Most restaurant-sized portions are way too big!

- 1 teaspoon onion powder
- 2 teaspoon fine ground sea salt
- 1 teaspoon freshly ground black pepper

- 1/2 red bell pepper, diced
Instructions
