Ingredients
- 1 cup cottage cheese, 2% or full fat
- ½ cup sour cream, light or regular
- ½ lemon juiced, about 1 tablespoon fresh lemon juice
- 1 tablespoon fresh chopped dill weed, or 1 teaspoon dried dill weed, plus additional for garnish
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon kosher salt, or to taste
- Freshly ground black pepper, to taste
Optional Ingredients
- 3 tablespoons finely diced red bell pepper, divided
- 3 tablespoons finely diced green bell pepper, divided
- ⅓ cup frozen corn, thawed and drained well
Instructions
- Add the cottage cheese, sour cream, lemon juice, dill, garlic powder, onion powder, salt and pepper to a blender or food processor and blend until smooth.
- Transfer to a serving bowl and garnish with a little additional dill. It's delicious right away or cover and refrigerate until ready to serve.
- Serve with crackers and assorted vegetables like baby carrots, celery sticks, sugar snap peas, mini bell peppers, jicama sticks, sliced cucumber, etc.
Peppers and Corn Variation
- If using the veggies, stir in 2 tablespoons of each color of bell pepper and ¼ cup corn. Garnish with the reserved bell pepper (1 tablespoon of each).
