These gluten-free Paleo Chocolate Chip Cookies are a delicious, healthier treat. The texture is perfectly chewy and they are amazing warm out of the oven or cold the next day.

Chocolate chip cookies are by far one of my favorite sweet treats! Growing up, my Grandma used to only make them at Christmas. I’ve come up with this healthier chocolate chip cookie recipe so that I can bake cookies whenever the craving strikes.
My bestie, Lara, is a dietitian and she’s been getting on my case about trying to make a healthier version of chocolate chip cookies. So, today I’m sharing these delicious gluten-free and Paleo Chocolate Chip Cookies. I’ve also adapted Grandma’s recipe to make these amazing Pecan Pumpkin Chocolate Chip Cookies – another delicious choice!

Ingredients for Paleo Chocolate Chip Cookies

How to Make Cookies Paleo
- This recipe calls for coconut oil instead of vegetable oil. This swap reduces the amounts of omega 6 found in vegetable oil and replaces it with healthier medium chain triglycerides (MCTs) found in coconut oil. This is one of the health benefits of coconut oil.
- I’ve swapped out regular flour that has gluten for almond flour and coconut flour.
- I’ve replaced regular sugar with coconut sugar.
- I make my own paleo baking powder at home. It’s easy!
- I used Enjoy Life Dark Chocolate Chips which are vegan, dairy-free, and paleo friendly.
Now, I’m not saying to indulge in these cookies if you want to lose weight because they’re not low calorie by any means. But if you want to enjoy cookies that are a little better for you without having to sacrifice taste, you’re going to want to make these!
Instructions

- In a medium bowl combine almond flour, coconut sugar, coconut flour, cinnamon, baking powder, and salt and set it aside.

- In a large bowl or mixer combine the eggs, oil, and vanilla extract.

- Once you have combined those ingredients, you will slowly add in dry ingredients, mixing until well combined.
- Then, fold the chocolate chips into the mixture.

- Line cookie sheets with parchment paper or silicone baking mats.
- Using a cookie scoop or two spoons, spoon out dough about 1 1/2 to 2 inches apart.
- Transfer the baking sheets to the freezer for 45 minutes, or refrigerate it for 2 hours.

- Preheat the oven to 350 degrees F.
- Transfer the cookies sheets from the freezer or refrigerator to the preheated oven and bake for 15 minutes. Cool on the baking sheets for 5 minutes then transfer the cookies to a wire rack to cool completely.

These cookies are so good! No one will know they’re paleo and gluten-free. Test this for yourself by making them for your family and enjoy them while they are warm from the oven on a cool winter night.

- Transfer the baking sheets to the freezer and freeze the dough for 45 minutes, or refrigerate for 2 hours.
- Preheat oven to 350 degrees F. Remove the cookie sheets from the freezer or refrigerator and bake for 15 minutes. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

why do you think the dough need frozen or refrigerated 1st?
Hi Linda. Chilling cookie dough before baking solidifies the fats and helps prevent the cookies from spreading too much. Hope this helps!
